Cajun Sausage, Kale, and White Bean Soup {slow cooker, stove top}

A Southern twist on a classic sausage kale soup. This Cajun inspired soup has a flavorful broth, a touch of spice, and plenty of andouille sausage and vegetables to fill you up.

I recently made this cajun white bean soup to take to a ladies event at my church and it was a huge hit! Soup may shout “chick food” but this soup is hearty enough to satisfy any man’s palette! Served with a crusty sourdough bread for dipping and you have a nice warm meal for cold nights.

Cajun Inspired White Bean Soup

If you enjoy the flavors of gumbo and jambalaya, you are sure to love this version of sausage kale soup. Italian herbs are replaced with cajun seasoning in this recipe for a spicy and bold taste.

Lightly seared for extra depth, andouille sausage also shines in this sausage kale soup recipe, replacing traditional Italian sausage.

How To Make This Spicy Andouille Sausage Kale and White Bean Soup

This soup recipe is easily adjustable for stove top and the Crockpot. It can also be doubled easily and is just enough to fill a crockpot.

You’ll begin this soup by searing the andouille sausage and sautéing your vegetables until they are just barely softening. The kale will be added at the very end, before serving.

If cooking on the stovetop, you’ll need a large dutch oven (which you can do your searing in sautéing in). The soup will lightly boil for 20 minutes before it’s ready to be served.

If cooking in a Crockpot, the slow cooker will do all the work for you while you tend to other things. Let the soup cook for 5 to 6 hours on low or 2 to 3 hours on high.

Cajun Sausage, Kale, and White Bean Soup {slow cooker, stove top}

Ingredients

  • 1 tablespoon olive oil
  • 12 oz andouille sausage, sliced into 1/4" rounds
  • 1.5 cups carrots, chopped (about 3 medium carrots)
  • 1 medium yellow onion, chopped
  • 2 stalks celery, chopped
  • 4 cloves garlic, minced
  • 8 ounces baby Bella mushrooms, sliced
  • 28 ounces chicken broth
  • 1 cup water
  • 1/2 tablespoon cajun seasoning
  • 2 teaspoons dried parsley
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cans cannellini beans, rinsed
  • 2- 3 cups kale, about 6 ounces

Instructions

  1. In a large skillet over medium high heat, brown the sausage until well seared. Remove from pan and place in crockpot.
  2. Reduce heat to medium and add olive oil to skillet.
  3. Add carrots, celery, and onion to the skillet and saute 3 minutes. Add garlic and saute 1 minute more. Transfer to crockpot.
  4. Add broth, mushrooms, spices, and beans.
  5. Cook on low for 5 to 6 hours.
  6. Add kale at to the soup, taste for seasoning, stirring well, before serving.

Notes

This soup may be cooked on the stovetop in a dutch oven. Follow the same directions for steps 1-4, adding the mushrooms to the skillet to saute. Bring the soup to a low boil and let cook for 10 minutes. Add kale and cook 10 minutes more. Taste for seasoning before serving.
