We love having smoothies in the summertime. Usually they are full of summer fruits, but since Christmas is approaching I am testing out a few ideas to create some smoothies that taste of Christmas, yet will work in the summer heat. I’m working on a smoothie version of a Christmas hot chocolate, but first I have a Gingerbread recipe to share with you.
I found this recipe at Homegrown Kitchen which gave me the idea. However, since the only ginger I like is in gingernut biscuits, gingerbread and ginger beer I didn’t want to include ground ginger in the recipe so I added crushed gingernuts instead.
I put the gingernuts in a zip-lock bag and bashed them with a rolling pin before adding them to the blender. I wasn’t sure if the blender would cope with putting in whole ginger nuts, but it broke up the little bits really well. The kids were really intrigued with me bashing the biscuits!
I loved the mix of colours in the blender when I had added all the ingredients.
The result was a lovely mix of ginger, nutmeg and cinnamon. A great taste of Christmas.
- 6 Gingernut Biscuits
- 1 cup of milk
- 1 cup of vanilla yoghurt (or 1 cup of natural yoghurt and 1 teaspoon of vanilla extract)
- 1 banana
- 1 teaspoon of 1oats
- pinch of nutmeg
- ½ teaspoon of cinnamon
- Place the gingernuts in a zip-lock bag and crush with a rolling pin.
- Place all the ingredients in a blender and blend until smooth.
- Add some Christmas decoration if you wish.
Then I came across this idea from caketime the other day which I thought would be a great addition for Christmas. Aren’t they cute!
